meringues

Wishing you a happy holiday period..bake,eat and be merry!

Today is a short post giving you the recipe for these little melt in mouth treats, combined with a little kitchy styling.   What did you bake and eat these past couple of days?

Makes 22 melt in your mouth kisses

 2 large egg whites

120 g fine, white sugar

30g powder sugar

30g butter

1 teaspoon, vanilla extract

40g coco powder (plus extra for dusting)

60g double cream

Preheat oven to 190° C. Line a firm baking-sheet with baking paper.

Place the egg whites in a bowl with the sifted powder sugar and beat until mixed together. Gradually add the sugar whilst beating until it forms a glossy mixture and the egg whites form a peak. Fold in the vanilla extract.

With a teaspoon, place the mixture in rounds onto the baking sheet forming a small peak when lifting the spoon. You can tap the bottom of the sheet to assure that the meringue mixture spreads evenly, and this also prevents the base from sticking. Place in the oven and bake for 25 minutes. In the meantime, In a bowl beat  the cream, soften butter and cocoa  then set aside.

Leave the meringues to cool for 10 minutes. With a spoon, dab a little cocoa mixture in the middle of the meringue base. Join with another meringue for the cocoa mixture to spread evenly. Leave the batch to firm then sift the tops with a little coco powder.
Enjoy your treat!
