It was a pleasant surprise this autumn to find unblemished blackberries at our local food markets. I put these slight tangy fruits straight into use with this frozen dessert.
250g Blackberries2 Teaspoons, Honey
1 Tablespoon, Lemon juice
250g Natural Yogurt
180 ml Cream
1/2 Capful of cassis liqueur (blackcurrant liquor)
How to make:
1. Carefully rinse the blackberries and keep 8 aside for the tops.
2. Puree the rest of the blackberries together with the honey and lemon juice.
3. Put through a sieve to discard any lumps, then add to the yogurt with the cream and liquor by mixing well together.
4. Spoon evenly into four desserts bowls, then place two blackberries on top. Freeze for at least two hours, then serve straight from the freezer.

... Nice! I love frozen yogurt. Our neighbour has a raspberry bush in our back garden. There were fruits on it until a couple of days ago. I guess the raspberries are just as long-lasting. |
