Do you sometimes find a jar of opened applesauce in your fridge, then don't know what to do with the left overs? Here's a sweet little treat to make with the remainder. Not only is the sauce commonly consumed with roast pork; in Germany, we use the applesauce (Apfelmus) to serve on top of potato pancakes (Kartoffelpuffer). If you don't fancy peeling and stewing the apples yourself, then keep a jar handy in the cupboard to make these simple applesauce biscuits.

Applesauce is made by stewing acidic apples such as Bramley apples with water or fresh apple juice to the desired purée. Spices and lemon juice can be added for flavouring. The sauce is a handy condiment to have on hand during the winter period, as it preserves extremely well!
Makes 12 biscuits
What you'll need:
60g Butter, soften
100g Raw Sugar
160g Applesauce
150g Flour, plain
½ teaspoon, Baking powder
½ teaspoon, bicarbonate of soda
½ teaspoon, Cinnamon powder
50g Sultanas
50g Walnuts, crushed finely
How to bake:
Preheat the oven to 200°C. In a bowl, mix together the butter and sugar until a light cream appearance. Stir in the applesauce. In a separate bowl, add the flour, bi-carb soda, baking powder and cinnamon then mix well together. Transfer to the butter mixture, stir and mix in the sultanas and walnut pieces evenly.
Line a baking tray with baking paper. Add a dessertspoonful of the biscuit mixture proportionally on the tray by leaving 10cm spacing in-between. Put the baking tray in the middle row of the oven, then bake for 12-15 minutes until golden and until the biscuits form a firm edge. Cool for one minute before transferring the biscuits to a wire rack. Rest for five minutes to completely cool down ...In the meantime, why not make yourself a cup of hot chocolate!

... I love potato pancakes. My grandma was adding some grated apples inside of them, but I am purist, I prefer them with no extras inside or outside. But I don't mind applesauce in biscuits, I will put try the recipe someday |

... Magda, this biscuit is the cheats way but for a cake I would definitely add the real chopped apples. I figured for a biscuit the sauce was okay to add a little dabble. |
