a DIY puff pastry strudel for a festive dessert

makes one strudel
for the puff pastry:
150g plain flour
Salt teaspoon
1 ½ Tablespoon oil
2 egg yellow
Oil for spreading
1 Tablespoons melted butter
2 Tablespoons ground almond
for the filling:
400g Boskop Apples
100g Marzipan, chopped
2 Tablespoons sultanas
3 Tablespoons ground almond
2 Teaspoons of shaved orange peel
2 Tablespoons fine sugar
1 Tablespoon Cinnamon powder
method:
1. For the pastry: Sift the flour and a pinch of salt in a bowl. Add the oil, 1 egg yellow and mix to make a well. Add the warm water and with a dough hook or hand mixer, blend together until all forms a ball. On a slightly floured workbench, form a ball and wrap in plastic wrap and refrigerate for one hour.
2. In a saucepan: mix the peeled, quartered and finely cut apples with the remainder of the filling ingredients on a low heat until the apples have softened.
3. Preheat the oven to 180ºC. Roll out the puff pastry to form a square 40 x 40 cm floured base. Add the filling mixture the centre to form a long line and gently wrap the pastry to form a log shape. Baste the strudel with the egg yellow and bake in the oven for 30 minutes
