Makes 30 biscuitsOil for basting the tray
160g, whole wheat flour
130g unsalted butter, soften
1 teaspoon baking soda
50g brown sugar, lightly packed
50g granulated sugar
1 egg
1 teaspoon vanilla extract
40g ground almond meal
30 whole almonds
method:
1. Preheat the oven to 190ºC. Sparingly rub a couple of baking trays with oil.
2. In a large bowl, whisk together the flours and baking soda.
3. In another large bowl beat together the butter and sugars until fluffy. Add the vanilla extract, egg and beat until combined. Gradually stir in the flour mixture making sure to bend well.
4. Roll the mixture into 8 cm balls, and place on the baking trays. Place an almond in the center of each biscuit and press lightly. Bake for 12 minutes until lightly browned. Cool down on a wire rack.
