Use in sauces and marinades and an extra zap on an endive salad.
Makes up 1 liter
- 3 Fresh Elderflowers (umbels). It's a seasonal spring flower.
- 1 liter of white wine or red wine
1 Place umbels without their stalks into a tall glass, then pour in the wine vinegar.
2 Keep covered for 14 days, and place on a warm windowsill.
3 Filter through a nicely shaped bottle, and place in a cool, dark place.
Small bottles can be found in most department stores in the kitchen supply department, or in craft shops.
