wild garlic paste

A quick fix paste that is instant for noodles or a salad dressing

garlic_noodles

  • 80g  wild Garlic (Ramsen) chopped.
  • 60g  pine nuts
  • 40g parmesan chopped
  • 80 ml vegetable oil
  • 1 garlic clove
  • sea salt and cracked pepper

 1 Wash and dry the wild garlic leaves.

2 Without any oil, lightly brown the pine nuts and garlic in a pan.

3 Place all ingredients in a mixer with the oil, and blend to required smoothness. 

For a noodle dish; I prefer to not to blend my pine nuts too much to give a slightly crunchy paste. The smoother mixture is ideal for salad use.

add two tablespoons of paste to a bowl of noodles per serving.
