I love this idea. Only recently I found a provider of very interesting jams in Catalonia - the Poblano one being one of my favorites which is a good option if the typical quince paste is not your cup of tea: www.leseroles.com. Also, black olive and eggplant is quite surprising even though olives and sugar don't really blend that well in my point of view. I will be trying your pear jam, adding a bit of fresh chillie for the extra ooomph. And As a cheese I will use a young and soft, divinely tasty buffalo cheese called Suau de BÃºfala (tierno) which you see here: http://www.flickr.com/photos/formatges/5628174904/in/photostream.
